* The Okinawan brown sugar is important here. It is quite different from other brown sugar. Standard brown sugar is made by adding molasses back to refined white sugar; the Okinawan brown sugar is made by slowly cooking down pure sugar cane juice. It's rich and a little savory, adding a whole new dimension to the old fashioned!
