2 oz Baijiu*
1 ¼ oz simple syrup
1 oz fresh lemon juice
1 inch cube of fresh pineapple
3 peeled and pitted lychees**
1 ¼ oz heavy cream
1 egg white
Garnish: lychee (optional)

Muddle lychees & pineapple in a shaker. Add simple syrup and lemon juice, and shake with ice. Double strain into shaker, add heavy cream and egg white, then shake for one minute. Pour over crushed ice and garnish.

* Baijiu is the world’s top selling alcohol (!) but it’s consumed mostly within China.

** We found fresh lychees in SF’s Chinatown. But, if you can’t find them fresh you can substitute with canned ones, which are often sold in the international section of supermarkets or Asian grocery stores.
